Pressure Cooker Gajar Halwa | प्रेशर कुकर गाजर हलवा | Carrot Halwa | Sanjeev Kapoor Khazana

Actually tender and scrumptious. The way you get the halwa when cooked in pressure cooker is incredible.

PRESSURE COOKER

Components

1 kilogram red carrots, peeled and grated
1/3 cup ghee
10-12 cashew nuts, vertically cut in half
8-9 almonds, slivered
6-7 pistachios, slivered
1 1/2 cups milk
1 cup sugar
1/2 tsp green cardamom powder
10-12 pishori pistachios, blanched, peeled and slivered + for garnish
Silver varq for garnish

Method

1. Heat ghee in a pressure cooker. Add cashew nuts, almonds, pistachios and sauté for a minute.
2. Include carrots and sauté for 2-3 minutes.
3. Stir in the milk, cover and cook under pressure on medium heat for 3 whistles.
4. Open the cooker once the pressure has actually lowered completely. Place the cooker back on heat, sugarcoat and green cardamom powder and mix well. Cook till the mixture thickens.
5. Include pishori pistachios and blend well. Transfer into a serving bowl, garnish with pishori pistachios and silver varq.
