Looks great! Out of curiosity: Why allspice on the pork and not paprika and cayenne pepper? Especially when adding chipotle and lime later. To my palate they would be the natural choice?
The chipotle will add the smokiness and heat that you’d get from paprika and cayenne so the allspice adds a different flavor profile and dimension to the dish. You don’t want all your spices being the same.
