PHIRNI

Components

5 tablespoons rice, soaked for 30-40 minutes, and drained
1 litre milk
A generous pinch of saffron
3/4 cup sugar
1/2 tsp green cardamom powder
10-15 pistachios, blanched, peeled and slivered

Approach

1. Transfer the rice in a grinder jar, include 1/4 cup water and grind to a coarse paste.
2. Bring milk to boil in a deep nonstick pan. Add the ready rice paste, saffron hairs and prepare on medium heat for 10-12 minutes or till the rice is totally cooked.
3. Sugarcoat and cook on medium heat for 2-3 minutes or till it dissolves entirely.
4. Include green cardamom powder and blend well.
5. Transfer the mix in individual earthenware bowls, sprinkle blanched pistachios and enable to come down to room temperature level.
6. Refrigerate for 2-3 hours.
7. Serve chilled.

Chef's Pointer: It is a great idea to grind green cardamom with a little sugar as otherwise the amount of green cardamom might be too little to grind. You can store this in an airtight container for use in sweet meals and desserts.
