MOZZARELLA STUFFED CHILLI PAKORA
Ingredients
8 medium Bhavnagri green chillies
1 cup grated mozzarella cheese
Oil to deep fry
1/2 tsp combined dried herbs
1 tsp chaat masala
1 1/2 cups gram flour (besan).
1/2 cup cornstarch.
Salt to taste.
1/4 tsp turmeric powder.
1/2 tsp red chilli powder.
A pinch of baking soda.
Method.
1. Slit green chillies without cutting through and get rid of the seeds.
2. Heat enough oil in a kadai.
3. Place mozzarella cheese in a bowl, add dried blended herbs and chaat masala and blend well.
4. Things this mix into the chillies and set aside.
5. Mix gram flour with cornstarch, salt, turmeric powder, red chilli powder and baking soda in a bowl. Add enough and whisk to make a thick and smooth batter.
6. Dip the stuffed chillies in this batter, slide carefully into hot oil and deep-fry till golden. Drain pipes on absorbent paper.
7. Serve hot.
