Indulge in the appetizing explosion of flavors with Mixed Vegetable Pickle.
MIXED VEGETABLE PICKLE.
Ingredients.
1 medium cauliflower, cut into small florets.
2/3 cup green peas.
18-20 French beans, stringed and cut into 1 inch pieces.
4 medium carrots, peeled and cut into small pieces.
1 cup mustard oil.
2 teaspoons mustard seeds.
3 tablespoons split mustard seeds (rai ka dal).
1 teaspoon asafoetida.
1 teaspoon turmeric powder.
5 teaspoons red chilli powder.
3 1/2 teaspoons salt.
1/4 teaspoon fenugreek seeds (methi dana).
2 1/2 tablespoons vinegar.
Technique.
1. Heat mustard oil in a non-stick pan till it smokes. Include mustard seeds and sauté till they splutter.
2. Include split mustard seeds and turn off the heat. Add asafoetida, turmeric powder, chilli powder and salt and blend well. Remove from heat and set aside to cool.
3. Dry roast fenugreek seeds till aromatic and crush coarsely in a mortar with a pestle.
4. Put veggies in a bowl. Include crushed fenugreek seeds, spiced oil and vinegar. Mix well, cover securely with a muslin cloth and set aside for 2 days to mature.
5. Serve or store in airtight container.
