MASALA CORN PULAO
Ingredients
1/4 cup corn kernels, boiled
1 1/2 cups Basmati rice, soaked for thirty minutes and drained pipes
Salt to taste
1 tbsp oil
1 tsp cumin seeds
1/4 tsp turmeric powder
1 tablespoon ginger-garlic paste
1 medium onion, pureed
1-2 green chillies, carefully chopped
1 tsp coriander powder
1/2 tsp cumin powder
1/2 cup tomato puree
1/2 tsp garam masala powder
5-7 fresh coriander sprigs
Technique
1. Heat 4 cups water in a small deep non-stick pan, cover and bring to boil. Add rice and salt, cover and cook till rice is done.
2. Heat oil in a deep non-stick pan. Add cumin seeds and sauté till aromatic. Include turmeric powder and sauté for 10 seconds. Include ginger-garlic paste, mix and sauté for 30 seconds.
3. Add onion puree and sauté for 1 minute. Include green chillies, coriander powder and cumin powder, mix well and sauté for 30 seconds.
4. Include tomato puree and salt, mix and cook for 1 minute. Add garam masala powder and mix.
5. Carefully slice coriander sprigs, contribute to the pan and mix. Include corn kernels, mix, cover and cook for 2 minutes.
6. Stress cooked rice in a colander. Spread rice on top of onion-tomato mix, cover and cook for 1-2 minutes. Mix lightly.
7. Serve hot.
