Tender meat cooked in spices with curry leaves and sautéed with coconut adding their distinct taste is how mutton is cooked in the charming town of Kottayam.
KOTTAYAM STYLE MUTTON ROAST
Active ingredients
750 grams boneless mutton, cut into 2 inch pieces
2-3 green chillies, diagonally sliced
10-12 garlic cloves, vertically sliced
2 tbsps finely sliced ginger
1 tsp fennel (saunf) powder
1 tsp black pepper powder
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp garam masala powder
Salt to taste
1 lemon, halved
2 large onions, very finely sliced
1 sprig of curry leaves
3 tablespoons oil
2 tbsps chopped fresh coconut
Onion pieces to serve
Lemon pieces to serve
Technique
1. Put the mutton in a pressure cooker, include green chillies, garlic, ginger, fennel powder, black pepper powder, red chilli powder, turmeric powder, garam masala powder, salt, squeeze the juice of lemon and include the onions, and curry leaves and mix till the mutton pieces are well covered with the masala. Place the cooker on medium heat, include 1/3 cup water, mix, cover and cook under pressure for 4-5 whistles.
2. Open the cooker once the pressure has decreased completely.
3. Heat oil in a shallow pan. Include coconut and blend well. Prepare till it turns golden.
4. Add the mutton into the pan and mix well. Prepare on high heat till the mix ends up being dry.
5. Transfer the mutton roast into a serving plate, garnish with fried curry leaves and serve hot with onion rings and lemon slices.
