An unique chaat made with sweet potatoes and an intriguing medley of sweet and hot chutneys with a sweet chivda garnish.

RATALYA CHA CHAAT

Components

4 medium sweet potatoes (ratala).
Oil for deep-frying.
Salt to taste.
1-2 tbsps green chutney.
1-1 1/2 tbsps sweet date chutney.
Whisked yogurt as needed.
Potato chiwda as required.
Fresh pomegranate pearls as needed.

Technique.

1. Heat sufficient oil in a kadai.
2. Peel sweet potatoes and cut into little pieces.
3. Deep-fry sweet potato pieces in hot oil till golden and crisp. Drain pipes on absorbent paper. Transfer in a bowl.
4. Add salt, green chutney and sweet date chutney to fried sweet potato pieces and mix well.
5. Put some fried sweet potato mixture into specific serving bowls. Put some yogurt and put some potato chiwda and pomegranate pearls on top.
6. Serve right away.
