Pad See You with Chicken

3 tablespoons (45 milliliters) Chinese sweet soy sauce
1 tablespoon (15 milliliters) oyster sauce
2 tablespoons (30 milliliters) fish sauce
2 teaspoons (10 grams) sugar
1 1/2 cups (335 grams) broccoli florets
3 tablespoons (45 milliliters) grease
1 pound (450 grams) chicken breast, sliced thin
2 cloves garlic, minced
2 large eggs
4 cups (960 grams) fresh rice noodles, separated
1/2 teaspoon white pepper

Instructions

Combine the Chinese sweet soy sauce, oyster sauce, fish sauce and sugar in a little bowl and set it aside.

Location the broccoli florets in a bowl with about 1 tablespoon (15 milliliters) of water and cover with cling wrap. Microwave for 1 1/2 minutes on high, then reserved up until all set to use.

Heat the oil on high in a large frying pan for about 1 minute. When you see the very first wisps of white smoke, add the chicken and garlic to the pan and saute for about 1 minute or until the exterior of the chicken is mostly burnt and nontransparent. Do not be frightened to really scrape the bits off the pan prior to they burn.

Add in the eggs, then "cradle" the noodles in the eggs, tossing to coat the noodles with the egg.

Drain the broccoli and add, tossing it continuously till it begins to turn dark green, 1 to 2 minutes. Then include the sauce and stir continuously to combine for about 3 minutes till the noodles absorb the sauce and begin to crisp a little on the edges.

When the chicken is prepared through and the sauces are taken in, spray with white pepper and combine effectively.

  5. I would argue the best “comfort noodle dish” is chicken noodle soup. I swear by that stuff when i am sick or feeling sick. The good old Jewish penicillin. Even if it doesn’t help, it’s easy to eat, nutritious, and just comforting.

  6. if you’re not used to fish sauce or decide to buy it for the first time to make this recipe, please TASTE IT first before dumping it in. fish sauces vary in taste not just from brand to brand but from country to country. if you taste it and it seems too strong, start with a lot less and taste your dish while cooking. you can always add more fish sauce later, but good luck trying to remove it.

    the brand he’s using is three crabs viet hong fish sauce. this is a pretty affordable brand with a smooth and well-balanced flavor. it’s on the milder side so 3 tablespoons of this isn’t unreasonable (unless you’re really not into fishy flavors in which case start with less than half).
