I did a chilli recipe of his years ago , chicken covered in chilli sauce , and put on top of sliced garlic bread to roast in oven = absolutely delicious 😋 try it
I made this tonight and it was excellent. I love your pans, btw The first set lasted almost 10 years! I was served a dish called Spaghetti Rasputin in a small Italian restaurant in Madrid many years ago. I reverse engineered it as well as I could and it is a favourite of ours. Smoked salmon just as you used it, also with spring onions or shallots, a dash of Noilly Prat (probably was vodka, but I prefer white vermouth), then cooking cream, reduced to thicken somewhat. Served over pasta with a dollop of caviar on top. You can’t go wrong with good smoked salmon.

The explanations are so clear and practical — not just fancy techniques, but real, usable methods that actually make a difference in everyday cooking. I used to get overwhelmed by certain recipes, but this book breaks things down in a way that finally clicked for me.
I also read 100 Chef recipes by that same author Sebastian Noir, would totally recommend it
