There are different types of Marsala wine that she does not mention, do not pick the lighter domestic Marsala wine, the sauce will be lighter in color and won’t be as sweet. If you see some Marsala wine and it says Cribari, do not get it! That’s the lighter Marsala wine, it tastes similarly to champagne or white wine, you want the darker Marsala Wine. If you don’t know any darker Marsala wine names then I suggest getting the Lombardo. It’s darker, richer, and sweeter than Cribari, it will give you the results you are looking for.
