  2. I’m sure it’s delicious but it’s not fettuccine Alfredo. Fettuccine Alfredo is Parmigiano Reggiano, Butter, and pasta water. I know I’m not Italian but I learned This information from Italians.

  3. I love it with thin slices of sweet sausage. The cream holds it together, or you can add a tempered egg yolk. Make sure you remove sauce from heat before adding cheese, it can burn. Alfredo “breaks” easily. Never reheat in microwave.

  8. This should be waay better than jarred. However. currently: 2 cups cream = $2, cheeses = @$2, 2 sticks butter = $2 = $6. Can of alfredo = $2-4. And there’s no cooking involved. That’s why one might still reach for the jar.

  9. If you grate your own Parmesan cheese, be careful with your knuckles. In Italy, they sell some round metal dishes with a grate on top for grating cheese — at least they used to.

  10. Italian Pasta Alfredo only calls for butter and Parmesan cheese.
