Bacon and Tomato Pasta.

Total: 35 min.
Prep: 15 min.
Cook: 20 min.
Yield: 4 to 6 servings.

Components.

2 tablespoons kosher salt.
16 ounces pasta.
1 pound thick-cut bacon or , chopped.
3 tablespoons extra-virgin olive oil.
1 cup red onion, diced.
1 teaspoon red chili flakes.
3 tablespoons garlic, minced.
2 cups Roma tomatoes, diced.
1/4 cup red wine.
4 tablespoons basil, chiffonade.
1/4 cup newly grated Parmesan.
Salt and freshly ground black pepper.

Instructions.

In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook up until the pasta is al dente.

In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Get rid of bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Include extra-virgin olive oil, onions, and red chili flakes. Cook up until onions are translucent, include garlic, cook for 2 minutes then include tomatoes. Saute for 5 minutes, then deglaze with red wine.

Drain pipes pasta and contribute to the tomato mixture pan. Include basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

  4. Mmmmm, a little pasta water would help to homogenize the dish and make it creamy. Yum!

As of late I have been making a very simple sauce using the best quality canned whole Roma Tomatoes that I drain the liquid from the can and save that and put in a pan over low heat to slowly reduce. While the can liquor is reducing I cut the tomatoes into small pieces over a bowl to catch the liquid/juice from the tomatoes and add that to my pan to reduce. I very lightly salt the cut up tomatoes and stir them around to render more liquid/juice and the mash the tomatoes with a potato masher or you could run them though a food mill to reduce the tomatoes into very small pieces but yet not a purée. I drain the liquid/juice from the tomatoes again and add it to the pan to reduce. I reduce the tomato juice/liquid to the can until it’s basically a very thick sauce to almost a paste so low and slow is the word of the day. Once juice/liquid is reduced to my liking I addd the tomatoes a bit of freshly finely chopped Basil, and Oregano, two cloves of garlic sliced razor thin a small pinch of red pepper flakes and tablespoon of onion powder stir it all together and add a little EVOO a splash of red wine vinegar and then add that to a freshly cooked linguine with a little of the pasta water and a healthy sprinkle of the king of cheeses you can of course add meats of your choice or enjoy as is

  7. That was amazing you actually added vegetables and herbs to your pasta which is what I like because I find it with pasta especially if it’s a tomato pasta or a carbonara there’s not a lot of vegetables in it so brilliant

  12. I do the pre-chopped bacon rendered low & slow for my Americanized version of beef stroganoff. Cooks the onions & mushrooms beautifully, cooks the beef beautifully, adds tons of flavor to the dish, and somehow seems to make the beef more tender.
