Chef, young man very nice, I’m Irish & when I make my own corn beef I use brisket & for pastrami I ue the navel cut, I am assuming with the last name Levin that you are Jewish( which my church supports immensely & I support CUFI & IFCJ financially & in prayer)) the you are using the beef navel cut ? , maybe Kosher also ?, it looks delicious, tender, & juicy, etc….. plus I purchased a very small parcel/plot of land in Israel just outside of Jerusalem btw
