Green Moong Tepenade is a blend recipe made by blending mashed olives and boiled green gram with parsley, red chillies, and lemon juice. When functioned as a spread on a piece of baguette topped with a drizzle of additional virgin olive oil, it makes for a tasty and easy-to-make starter.
GREEN MOONG TAPENADE
Ingredients
2 cups boiled green gram (moong) (soaked and boiled with salt).
1/2 cup green olives, sliced.
1/2 cup black olives, sliced.
5 tbsps additional virgin olive oil + to drizzle.
Salt to taste.
1 tsp grated lemon zest.
1 French bread (baguette).
2-3 sprigs curly parsley.
1/2 tsp crushed red chillies.
1 tsp lemon juice.
Method.
1. Heat 2 tbsps additional virgin olive oil in a non stick pan. Include green and black olives together with boiled green gram and mix. Mash them lightly. Add salt and lemon enthusiasm and blend well.
2. Cut diagonal slices of French bread.
3. Transfer the mixture into a bowl. Chop curly parsley and contribute to the mixture. Include crushed red chillies, lemon juice and remaining additional virgin olive oil and mix well.
4. Arrange bread slices on a serving plate. Make quennels of the tapenade and keep over each slice.
5. Drizzle extra virgin olive oil over them and serve.
