* Gordon's * * Huevos * * Rancheros *.
4 ounces chorizo, diced.
1 little zucchini, diced.
1 little red bell pepper, diced.
1 little yellow onion, diced.
Kosher salt.
Newly ground black pepper.
1-2 tablespoons olive oil.
2 tablespoons sliced cilantro.
2 tablespoons smoked chipotle hot sauce.
3 tablespoons canned sliced tomatoes.
1 lime, zested.

* Black * * Beans *.
2 tablespoons olive oil.
1 15-ounce can black beans, drained pipes.
Kosher salt.

* Fried * * Eggs *.
2 tablespoons butter.
1 tablespoon olive oil.
4 eggs.
2 teaspoons paprika.
Kosher salt.
Freshly ground black pepper.

4 little corn tortillas.
1 avocado, diced.
4 ounces collapsed feta or cotija.

* PROCEDURE *.
1. Make the sauce: In a big frying pan over medium heat, include the chorizo and cook up until the fat begins to render..

2 teaspoons kosher salt.

2 tablespoons butter.
4 eggs, blended.
Kosher salt.
Freshly ground black pepper.

2 big flour tortillas.
4 ounces shredded cheddar.
1 avocado, diced.

    Same is true in life. When life puts you in a dark place, you often won’t see a way out at first. You’ll feel helpless.   12. No flour tortilla is found in a traditional dish of Huevos Rancheros. We use corn torillas and have been for many “centuries.” Also, use serrano peppers. JalapeƱos are fine but serranos are the way to go.
