Toor dal – ½ cup (100 grams)
Moong dal – 2 tbl spoon
Garlic cloves – 3
Turmeric powder
Green chilli – 1
Oil – 2 tbl spoon
Mustard – ¾ teaspoon
Urad dal – ½ teaspoon
Cumin seeds – ½ teaspoon
Pepper – ¼ teaspoon
Fenugreek – ¼ teaspoon
Asafoetida
Dry chilli – 1
Shallots – 20
Curry leaves
Tomato – 1
Sambar powder – 3 tbl spoon
Potato – 1
Drumstick – 1
Beans – 4
Carrot – 1
Brinjal – 2
Salt
Mango pieces
Tamarind juice of amla size
Coriander leaves

  6. I was looking for a good sambar recipe and this looks fabulous! Also simple. I used to do it differently but now see what should be done – fry veggies separately, then add dal. The tomatoes become paste as well. Interesting! I love the mix of vegs you added. Surprised there is no coconut in this version. What about a little lime juice? Maybe the green mangoes are adding the ‘khatta’ taste, eh?
    I now have this sambar, various dosa chutneys all filed away. Now I need a good non rice dosa recipe. I wonder if we can make dosa out of buckwheat, or other flour which will reduce glycemic index overall. I dare not eat white rice since it is too high in sugar and will raise my blood sugar too much. Dosa and idli, are too high in sugar index. I’m searching for a nice alternative, if anyone knows.
