Ingredients for Mutton Curry Recipe:

( Tsp- Teaspoon; Tablespoon- Tablespoon )

– Mutton – 500 gms (curry cut with bones).
– Potatoes, 3-4 medium- 250 gms, cut in half.

Tempering:.
– Green Cardamom-4.
– Cloves-4.
– Black Cardamom-2.
– Cinnamon-1.
– Bay leaf-2.
– Fennel Seeds-1 tsp.

Spice Powders:.
– Turmeric powder- 3/4 tsp.
– Red Chilli Powder- 1 tsp.
– Kashmiri Chilli Powder- 1 tsp.
– Coriander Powder- 1 tsp.
– Salt- 1 tsp.
– Meat Masala- 2 tsp (readymade).
– Kasuri Methi- 1 tsp (roasted and powdered).

Other Active ingredients:.
– Onions, chopped- 2 large (200 gms).
– Ginger garlic paste- 2.5 tsp.
– Red Tomatoes, sliced- 5 small (250 gms).
– Green Chillies, slit- 2.
– Oil- 4 tbsp.

Preparation:.

– Peel the potatoes and cut into halves.
– Slit the green chillies and slice the tomatoes.
– Likewise for the Kasuri Methi, dry roast it on low heat for a minute and enable it to cool. Now squash it into a coarse powder for use later.

Process:.

– Heat oil in a pressure cooker and include the entire spices and fennel seeds. Offer a stir and after that add the chopped onions and the slit green chillies.
– Fry on medium heat for 8-9 mins till light brown in colour and after that add the ginger garlic paste.
– Fry on low heat for around 2 mins.
– Now include the mutton pieces and mix well.
– Next add the salt and all the spice powders besides Kasuri Methi.
– Add a splash of water, mix and burn on medium heat for 6-8 minutes till the mutton pieces are little fried and covered with the masala.
– Now include the sliced up tomatoes, the roasted & powdered kasuri methi and a pinch of salt. Give a mix and cook on medium heat for 5-6 minutes till the tomatoes are soft and pulpy.
– Now add the halved potatoes, mix and fry on medium heat for around 2 minutes.
– Now add 300 ml water, offer a mix and pressure cook for 3 whistles.
– Permit the pressure to release and after that eliminate the cover.
– Simmer on low heat for 1-2 minutes and then serve with rice or roti.
