Ingredients for Tawa Chicken Fry:

Chicken, boneless pieces cut into little portions- 450-500 gms

– Ginger, chopped- 2 tsp heaped (10 gms).
– Garlic, chopped- 2 tsp heaped (14 gms ).
– Tomato, thick slices- 2 medium (160 gms).
– Green Chillies, chopped- 3 nos.
– Coriander leaves, chopped- 4 tablespoon.

Powders:.
– Turmeric Powder- 1/2 tsp.
– Red Chilli Powder- 1 tsp.
– Coriander Powder- 1 tsp.
– Kashmiri Chilli powder -3/ 4 tsp.
– Cumin Powder- 1/2 tsp.
– Garam Masala Powder- 3/4 tsp.

Other Active ingredients:.
– Kasuri Methi (Fenugreek Leaves), roasted and crushed- 1 tsp.
– Ginger, julienned – 2 tablespoon.
– Salt- 1 tsp.
– Oil- 3 tablespoon.
– Butter -2 tbsp.

Preparation:.

– Cut the boneless chicken into small bite sized chunks.
– Great slice the ginger and garlic to be used for tempering and chop the coriander leaves & green chillies.
– Make thick pieces of the tomatoes.
– Also take an inch of peeled ginger and cut them into julienne to be included at the end as garnish.
– Dry roast the kasuri methi and crush it with your hand as soon as cooled.

Process:.

– Heat oil on a Tawa or a pan and add the chopped ginger and garlic.
– Fry on low heat for a minute and add the chicken pieces.
– Mix and fry on high heat for 3-4 mins till chicken modifications colour and water almost dries up.
– Include all the spice powders (turmeric, red chilli, coriander, cumin and garam masala powder) and salt. Add a splash of water if needed and fry on medium heat for 3 mins.
– Now include the tomato slices and cook on medium heat for around 2 mins.
– Now decrease heat to low and cook covered on low heat at first for 5 mins. Get rid of cover and give a stir. Continue cooking on low heat for another 5 minutes till chicken is tender.
– Get rid of lid and add the Kasuri Methi, julienned ginger and chopped green chillies. Give a mix for a minute and then add 2 tablespoon of butter.
– Mix and fry on medium heat for another 2-3 mins till everythinf is integrated well, the masala coats the chicken pieces well and the colour has actually darkened.
– Finally include the sliced coriander leaves and fry for 1-2 mins on medium heat.
– Serve as a side or starter.
