The fried banana makes it seem like some kinda caribbean dish.. I would brulee your banana with some demerera on the sliced side and gently melt it with a torch. That way it still keeps the taste/texture of fresh banana. (had it that way in New Zealand, was amazing). The xmas leftover toastie was a bit of a stroke of genius, I’ll give him that.
Jamie I am not a sweet tooth and have loved your work from your get go, at about the same time I visited Thailand in the early 90’s and had a very similar dish lets agree to disagree on what we love, I am a more science alternative based cook, this dish looks amaze ballz

I find the American style easiest to make but I ;like the English style most.
