Mouth watering tikkis made with pearl millet flour and deep-fried to excellence
BAJRA WADA
Active ingredients
1 1/2 cups pearl millet flour (bajra flour).
1/2 cup yogurt.
1/2 tsp turmeric powder.
1 tsp red chilli powder.
3/4 tsp coriander powder.
1 tsp white sesame seeds.
1 tablespoon newly sliced coriander.
Salt to taste.
2 green chillies sliced.
Oil for deep frying.
Tomato catsup to serve.
Method.
1. Take bajra flour in a bowl. Add yogurt, turmeric powder, red chilli powder, coriander powder, white sesame seeds, chopped coriander, salt and green chillies. Include enough water and knead into a dough.
2. Divide dough into equivalent parts and shape each portion into medium sized tikkis and somewhat flatten them.
3. Heat enough oil in a kadai, add the discs and deep fry on medium heat till good and crisp. Drain pipes on an absorbent paper.
4. Serve hot with tomato ketchup.
