Crispy East-Side Mashed Potatoes

Ingredients

1 1/2 pounds Yukon gold potatoes, quartered
Kosher salt
2 tablespoons butter
1 tablespoon oil
1/2 teaspoon fennel seeds
1/2 teaspoon cumin seeds
1/2 teaspoon brown or black mustard seeds
1 medium white onion, thinly sliced
1 tablespoon minced fresh parsley leaves

Instructions

Pop the potatoes into a medium saucepan and fill with cold water until covered by about 1-inch. Season well with salt. Give a boil, lower to a simmer, and till a fork placed into the center of the potato meets no resistance, 20 to 30 minutes. Drain and travel through a ricer or food mill. Stir in the butter while hot.

Warm the oil over medium-high heat in a frying pan, ideally cast iron. Include the seeds; they need to sizzle upon contact. Once they stop popping, add the onions and saute till softened.

Add the mashed potatoes to the pan and flatten with a spatula so that potatoes can begin to crisp. Continue to toss and re-flatten the potatoes till there are patches of crispy deliciousness all the method through the potatoes, about 10 minutes. Eliminate from the heat, spray with parsley, and serve.

  1. Aarti is such an amazing chef, of course her cheerful and vivacious personality is the la creme de la creme alongside her mouthwateringly scrumptious recipes. Just love her so much, except the part of her awkward laughs which I find it sometimes cringeworthy. Aarti Party ROCKS all the way!!

  3. I like watching Aarti. I think she is pretty and I love her femininity. I like the concept of the mashed potatoes but I would have cup the onions in half and or used shallots instead. I usually use vegetable stock and turmeric to compliment the potatoes. More Aarti Food Network
