Actually the traditional Orzo (“Kritharaki”) in Greece is made with flour & milk instead of water. In some areas there is sour milk used, even eggs! It was a method to conserve those ingredients throughout the year.
That is the flour and water ratio, please? Is sour milk same as buttermilk?
@Sarah Albright No idea unfortunately, my grandma used to make something similar but that time I was way too young to appreciate the value of such a recipe…
Yes sour milk is close to buttermilk. However now I’m thinking, maybe they used normal whole milk and flour and then let the dough to ferment a bit and get that sourness…
Let’s try to apply plain pasta recipe and replace the water with milk and then see… 🙂
@Sarah Albright buttermilk i think is milk separated from the butter or the opposite and sour is like how to say it?? In greece we call it xinogalo or aryani

Orzo is wonderful. I live in a rural Canadian village and it’s readily available. It’s stuff like halumi cheese that we have trouble getting unless we go to a bigger centre.
Jamie you’re the man! I’m following you since my teenagehood and I have to say you’re maybe the only northern chef that loved and understood the Mediterranean cuisine that much. Love from Greece sir!
Here in Cyprus, we always grate halloumi on our pasta. I’ve never met anyone using Parmesan cheese unless you go out to a fancy restaurant!
Being Greek Cypriot, me & my non Cypriot wife still have to grate our separate cheeses for pasta dishes as i will only have Halloumi and she doesn’t like it 😂
I love orzo, so versitile. Also a little tip for anyone weaning babies; use it for spag bol – not so much mess and saves washing!😊

Looks great! Also consider toasting your orzo in some butter/olive oil before adding to the sauce for extra flavour as well 🙂
The base (orzo+tomato sauce) is incredible. Did it with fresh oregano, green olives and feta. Simple but delicious.
