मेथी मकई वड़ा | Methi Makai Vada | Sanjeev Kapoor Khazana

These deep-fried delights are not just tasty but also loaded with healthy methi. It makes for a beautiful treat in addition to some garma garam chai.

2 1/2 cups sliced fenugreek leaves (methi).
3/4 cup maize flour (makkai atta).
2 tablespoons entire wheat flour (gehun ka atta).
2 tsps toasted white sesame seeds.
1/2 tsp red chilli powder.
1/4 tsp turmeric powder.
1 tsp coriander powder.
3/4 tsp cumin powder.
1/4 tsp garam masala powder.
Salt to taste.
1 tsp sugar.
2 tsps ginger-green chilli paste.
1/4 tsp carom seeds (ajwain).
1 1/4 cups buttermilk.
1 tsp fruit salt.
Tomato catsup to serve.
Green chutney to serve.

Method.

1. Take fenugreek leaves in a big bowl. Add maize flour, entire wheat flour, toasted white sesame seeds, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala powder, salt, sugar, ginger-green chilli paste, carom seeds and mix well. Include buttermilk and mix till well combined. Add fruit salt and mix well.
2. Heat sufficient oil in a kadai.
3. Take small portions of the mixture and shape each portion into a ball. Carefully slide in a few of them into the hot oil and deep fry till golden brown and crisp. Drain pipes on an absorbent paper.
4. Set up on a serving plate and serve hot with tomato ketchup and green chutney.
