गाजर की बर्फी | Gajar ki Burfi | Sanjeev Kapoor Khazana

Components

4 cups grated red carrots (gajar).
1/4 cup ghee.
3 cups complete fat milk.
1 cup sugar.
1/2 tsp green cardamom powder.
A large pinch nutmeg powder.
1 cup grated mawa/khoya + for scattering.
2 tablespoons chopped pistachios + for sprinkling.
2 tbsps chopped almonds + for sprinkling.
2 tablespoons chopped cashew nuts + for sprinkling.
2 tbsps chopped raisins + for scattering.
Silver warq for garnish.

Approach.

1. Heat ghee in a kadai. Include red carrots and sauté for 4-5 minutes.
2. Add milk and blend well. for 10-15 minutes or till the carrots soften while stirring periodically.
3. Add sugar, green cardamom powder and nutmeg powder and mix well. Continue stirring and for 3-4 minutes.
4. Include mawa, pistachios, almonds, cashew nuts, and raisins and mix well. Prepare till the mixture thickens while stirring constantly.
5. Transfer the mix into a greased burfi tray. Spread it evenly and level the top. Sprinkle mawa, raisins, almonds, cashew nuts, and pistachios and press lightly. Use some silver warq on top. Keep aside to set.
6. Cut into squares, carefully de-mould and set up on a serving plate. Serve.
