I make a very delicious pumpkin cheesecake, that I found, I think from the popular store bought cream cheese brand, and over the years changed some canned ingredients to using fresh ingredients to make it.
I also changed the crust. The recipe called for a graham crust, which I do love, but one year I had ginger snap cookies, and decided to use those for the crust. Everyone in my family and extended family enjoyed the original recipe, but they loved it even more after I made these changes. It was expected to be at every Thanks Giving after that.
I love ginger and I find that it elevated this pumpkin dessert to another level. My favourite fall dessert.
