This Sprouted Moong Poriyal brings a fresh South Indian twist to everyday sprouts with a fragrant coconut tempering, curry leaves, and mild spice. Light, wholesome, and loaded with flavour, this meal shows that healthy food doesn't have to be uninteresting.

Ingredients.

1 1/2 cups sprouted green gram (moong).
2 tbsps coconut oil.
1/4 tsp asafoetida (hing).
1 tsp mustard seeds.
1 tsp split skinless black gram (dhuli urad dal).
2 dried red chillies, stemmed.
2 green chillies, chopped.
8-10 curry leaves.
Salt to taste.
1/4 cup scraped fresh coconut.

Method.

1. Heat coconut oil in a nonstick kadai. Include asafoetida, mustard seeds and urad dal and as soon as the mustard seeds start to splutter, include dried red chillies, green chillies and curry leaves and sautΓ© for a minute.
2. Add sprouted green gram, salt and cook for 6-8 minutes on medium heat.
3. Add coconut and mix well.
Transfer in a serving bowl and serve hot.
