This Sprouted Moong Poriyal brings a fresh South Indian twist to everyday sprouts with a fragrant coconut tempering, curry leaves, and mild spice. Light, wholesome, and loaded with flavour, this meal shows that healthy food doesn't have to be uninteresting.

If you're looking for a simple way to update your everyday sprouts into something comforting, nutritious, and genuinely satisfying, this poriyal is a must-try. One bite, and sprouts might simply become your brand-new favourite.

Ingredients.

1 1/2 cups sprouted green gram (moong).
2 tbsps coconut oil.
1/4 tsp asafoetida (hing).
1 tsp mustard seeds.
1 tsp split skinless black gram (dhuli urad dal).
2 dried red chillies, stemmed.
2 green chillies, chopped.
8-10 curry leaves.
Salt to taste.
1/4 cup scraped fresh coconut.

Method.

1. Heat coconut oil in a nonstick kadai. Include asafoetida, mustard seeds and urad dal and as soon as the mustard seeds start to splutter, include dried red chillies, green chillies and curry leaves and sauté for a minute.
2. Add sprouted green gram, salt and cook for 6-8 minutes on medium heat.
3. Add coconut and mix well.
Transfer in a serving bowl and serve hot.
