Chickpea salad toast is a meal that integrates a healthy velvety chickpea salad with toast. This dish is a great source of plant-based protein and fiber and can be a terrific alternative for vegetarians and vegans. It can be eaten as a light lunch or a treat. It's also healthy and simple to prepare.

CHICKPEA SALAD TOAST

Active ingredients

1 1/2 cups boiled chickpeas
4 toasted sourdough bread slices
2 tbsps tahini
5-6 garlic cloves
Salt to taste
Squashed black peppercorns to taste
2-3 tbsps extra virgin olive oil
2-3 tbsps chopped onions
2-3 tablespoons sliced tomatoes
2 green chillies, chopped
2 tbsps chopped fresh coriander leaves
2-3 tablespoons sliced assorted bell peppers
1 tablespoon lemon juice
Various lettuce leaves as required
Micro greens for garnish

Approach

1. Transfer chickpeas in a grinder container. Add tahini, garlic cloves, salt, crushed black peppercorns, extra virgin olive oil and grind to a coarse paste.
2. Transfer in a bowl, include onions, tomatoes, green chillies, coriander, bell peppers, lemon juice and mix well.
3. Location the bread pieces on worktop, arrange some lettuce leaves on each piece and top up with generous portion of chickpeas mixture.
4. Set up on serving plate, garnish with micro greens and serve.
