I discovered a brisket on sale and figured it 'd make some killer burgers. So I cubed up the entire brisket, tossed in some bacon ends & pieces, and ground all of it together to make the supreme brisket bacon burger. Experienced 'em with my Steak Rub and smoked them on the Outlaw Stick Burner grill. Finished it off with double cheese, my hamburger sauce, and all the typical hamburger garnishes … When you grind your own brisket and bacon for burgers, you know it's gon na be great! Hamburgers had incredible flavor, they were juicy and smoky and scrumptious!

WHAT MALCOM USED IN THIS RECIPE:
– Killer Hogs Steak Rub
– 6" Red Handled Knife
– Thermoworks Thermapen
– barbeque Gloves
– Disposable BBQ Boards
Smoked Brisket Bacon Burgers Recipe
– 16 lb entire packer brisket (untrimmed).
– 2– 3 pounds bacon ends & pieces (or thick-cut bacon).
– Killer Hogs Steak Rub (or salt, pepper, garlic).
– Hamburger buns (toasted).
– Sliced cheese.
– Pickles.
– Red onion slices.
– Lettuce.
– Tomato slices.
– Big Malc's Hamburger Sauce (or your preferred hamburger sauce).
Big Malc's Hamburger Sauce.
– 1/2 cup Blue Plate mayonnaise (or your preferred mayo).
– 1 tablespoon yellow mustard.
– 1/4 cup sweet pickle relish (juice and all).
– 1 tablespoon newly grated onion (with juice).
– 1/2 teaspoon Killer Hogs TX Rub (or a mix of coarse salt & black pepper).
– 1/2 teaspoon paprika (for color).
– 1– 2 teaspoons red white wine vinegar (just a drizzle).
Instructions.
1. Preparation the Brisket and Bacon.
– Cut the brisket into 1 1/2 to 2-inch chunks, separating the flat from the point if needed.
– Keep the fat on– you desire a good lean-to-fat ratio for juicy hamburgers.
– Cut bacon into similar-sized pieces so it goes through the mill easily.
– Chill the meat in the freezer for 20 minutes before grinding.
2. Grind the Meat.
– Alternate brisket and bacon as you feed it through the mill to uniformly mix.
– Grind the meat with the large plate first then if you want a finer grind, repeat the grind procedure.
– Chill the ground brisket-bacon mix in the fridge till all set to form patties.
3. Kind the Hamburger Patties.
– Weigh out about 8 oz portions and loosely form into balls.
– Use a hamburger press or hand-form into patties. Use parchment or a Ziploc bag for easy clean-up.
– Make a minor dimple in the center to prevent the patties from expanding excessive.
4. Season the Burgers.
– Season the outside of each patty with Killer Hogs Steak Rub or your favorite burger spices. Keep in mind the bacon adds salt, so don't overdo it.
5. Fire Up the Smoker.
– Set your pit to 275 ° F utilizing Royal Oak briquettes for a coal bed then add wood splits for heat.
– Location hamburgers straight on the grates and smoke for about 45 minutes, turning after 30.
– Cook to an internal temperature of 145 ° F for a juicy medium finish.
6. Develop Your Burger.
– Toast your buns and spread Huge Malc's Hamburger Sauce on both sides.
– Layer on: Pickles, Red onion, Lettuce, Tomato, Double cheese (cheddar + Swiss), Smoked brisket bacon patty.
– Crown it with the top bun and prepare to lean in.

I’ve done this myself…VERY tasty.
Yum, ground brisket and bacon! Great idea!
Another great video. You never disappoint. Looks delicious
When you said $2.99 a pound, I had to look to see how old this video was. Lol. They look awesome! 👍
I got too excited when I saw how cheap it was!!!
I would have thrown that in the cart no questions asked 😂
Kroger often runs them 2.99 especially with digital coupons. Shop sales stock up and freeze. Same with rib roast on the holidays. Works wonders
We don’t get sale priced Brisket up North. That’s a $100. Brisket here sadly. That Burger looks Amazing!!!
I played it twice just to make sure I heard him right! They are typically 6 bucks per pound in the CLT area. I smoke my own pork belly’s so I gotta try this! 😍
Sams Club will occasionally sell Brisket/Ground Beef mixed together and I would imagine adding bacon to the mix would be awesome.
You make awesome food videos
I was just getting ready to try something like this! Picked up a brisket on sale and was going to be the first time I used my new grinder. Thanks for the video!

I have followed this recipe with great success, even when using ground beef since brisket on sale is a rarity these days. Thanks for your inspiration throughout the years and congratulations on your upcoming induction into the BBQ Hall of Fame. Very well deserved.
