How to Smoke a Turkey That’s Juicy Inside & Crispy Outside

This one's everything about doing turkey the proper way– give it time to salt water, get that skin great and dry, and let the smoke do the rest.

I'm smoking this on my pellet grill, however this approach deals with any pit that can hold consistent heat.

The brine keeps it juicy, the smoke develops flavor in every layer, and the skin handles that deep, golden color that just appears like Thanksgiving.

WHAT MALCOM USED IN THIS RECIPE:

– Malcom's King Craw Cajun Flavoring
– Chicken Rack
– Non Reusable Barbeque Boards
– Thermoworks DOT
– BBQ Gloves

Smoked Turkey Recipe
– 1 whole turkey (12– 18 lbs), thawed
– HowToBBQRight Ultimate Brine Set
OR
– 1 bottle Malcom's Bird Brine
– 1 bottle Killer Hogs AP Spices
– 1 bottle Malcom's King Craw Cajun Seasoning
– Meat Bag
– Water (adequate to completely immerse turkey).
– 1 stalk celery, cut into portions.
– 1 medium onion, quartered.
– 1 apple, quartered.
– 3 cloves garlic, smashed.
– Cooking spray or oil (for finishing the skin).
– Chicken Rack (optional).

Instructions.
1. Salt water the Turkey.
Mix one bottle of Bird Salt water with 1 gallon of water till liquified. Place the turkey in a big brining bag or container and put the salt water mix over the bird. Include enough cold water to completely submerge.
Seal the bag (or cover the container) and refrigerate for 24 hr. For larger turkeys (over 16 lbs), brine up to two days.

2. Dry and Prep.
Eliminate the turkey from the salt water and discard the liquid. Pat the skin totally dry with paper towels– this is essential to getting crispy skin.

3. Stuff the Cavity.
Place the celery, onion, apple and garlic (usage whatever aromatics you like) inside the cavity. Connect the legs together and tuck the wing ideas below so the turkey cooks equally.

4. Oil and Season.
Lightly coat the whole surface area of the turkey with cooking spray or oil.
Season the backside initially with a medium coat of Killer Hogs AP Seasoning, followed by a medium coat of Malcom's King Craw Cajun Flavoring.
Flip the turkey onto a rack and repeat on the top side with the very same layers of flavoring.

5. Smoke the Turkey.
Pre-heat your smoker or grill to 275 ° F using pecan pellets (or your preferred wood).
Location the turkey on the pit, focused for even airflow, and cook up until the internal temperature in the inmost part of the breast reaches 160 ° F. 6. Rest and Serve.
Remove the turkey from the cigarette smoker and rest for 20 minutes. The internal temperature will carry over to about 165 ° F in the breast and 175 ° F in the dark meat.
