I noticed that you didn’t clean the habanero mash off your hand before
mixing in the other bowl . Still gonna get some sweet heat I would imagine ?
Pro tip for people put it in the freezer for 30 minutes then slice it

Never had jerky before but I think out biltong here in South Africa is better and definitely easier to make
