Vegetable Barley Soup | वेजिटेबल बार्ली सूप | Healthy Recipe | Sanjeev Kapoor Khazana

A healthy broth made from a bunch of exotic veggies, wholesome barley that's just mildly hot, indicates full nutrition guaranteed.

VEGGIE BARLEY SOUP

Ingredients

1/2 cup sweet corn kernels
1 little carrot, peeled and sliced
1 small green zucchini, chopped
10-12 little broccoli florets
1/4 cup sliced pumpkin
1 cup cooked barley
1 1/2 tablespoons olive oil
1 tablespoon sliced garlic
2 inch celery, chopped
2 tablespoons sliced leeks
1 medium onion, chopped
Salt to taste
Black pepper powder to taste
1 cup tomato puree
3-4 fresh thyme sprigs
4-5 cups vegetable stock
Squashed black peppercorns for garnish

Approach

1. Heat olive oil in a non-stick pan. Add garlic, celery, and leeks and blend well. Prepare for 1-2 minutes.
2. Add onion and sauté till clear.
3. Add sweet corn kernels, carrot, green zucchini, broccoli, pumpkin, salt, and black pepper powder and blend well. Cook for 1-2 minutes.
4. Add tomato puree, and mix. Pluck the leaves of thyme and add into the soup. Add vegetable stock, and blend well. Prepare till the mix comes to a boil. Add barley and blend well. Cook for 2-3 minutes.
5. Transfer into serving bowls, garnish with crushed black peppercorns. Serve hot.

  7. Great recipe! But irony is most of these things like thyme, zucchini, celery, broccoli, are not within my reach even in a city like hyderabad!! So, this is not for me!
