Pear Maple Biscuits

Components.
2 1/4 cups versatile flour, plus more for work surface area.
1 cup (.70 ounces) freeze-dried pears, crushed.
1 tablespoon baking powder.
1/2 teaspoon kosher salt.
8 tablespoons unsalted butter, cooled and cubed.
3/4 cup half-and-half.
1/4 cup maple syrup.
Instructions.
Preheat the oven to 450 degrees F. Heat a 9-inch cast-iron skillet in the oven.
Add the flour, pears, baking powder and salt to a food mill. Pulse 2 to 3 times to combine. Add 5 tablespoons butter, pulsing up until it resembles a coarse meal. Gather the half-and-half and 2 tablespoons maple syrup and pulse till simply combined. Transfer to a floured work surface and roll the dough into a square about 1/2-inch thick. Using a 2 1/2- inch biscuit cutter (or the rim of a glass works, too), cut 8 biscuits, re-rolling if needed.
Remove the frying pan from the oven and melt the remaining 3 tablespoons butter in the hot frying pan. Swirl the skillet to coat the bottom and sides with butter, then put the butter into a bowl and blend with the remaining 2 tablespoons maple syrup. Add the biscuits to the skillet and brush them each with a little of the maple butter, conserving the rest for ending up.
Bake up until lightly browned, 8 to 10 minutes. Brush the remaining maple butter on the biscuits and let them cool somewhat. Serve warm or at space temperature.
Cook's Note.
The biscuit dough can be made in a bowl with pastry cutters, knives or your hands rather of a food processor.

at a buffet, i personally sneak corndogs into the buffet so others can enjoy them. I hide 6 corndogs in my jacket pockets. it then, is a joy for me to see other patrons of the establishment eat my corndogs thinking they were part of the buffet.
