A fast and easy dish of spicy tomato chutney that can be a terrific accompaniment to your favourite treats.
SPICY TOMATO CHUTNEY
2 large tomatoes, roughly sliced
2 tbsps oil
1 tsp cumin seeds
1 inch ginger, chopped
3-4 dried red chillies
1 medium onion, chopped
Salt to taste
1 tbsp tamarind pulp
Fresh coriander sprigs for garnish
1 tablespoon oil
1/4 tsp cumin seeds
1/4 tsp asafoetida (hing).
2-3 green chillies, slit.
1 1/2 tsps red chilli powder.
1. Heat oil in a non-stick pan. Include cumin seeds and let them change colour. Add ginger, dried red chillies and sauté for 30 seconds.
2. Add onion and salt and blend well. Prepare till clear.
3. Add in the tomatoes, mix, cover and cook till they turn soft and pulpy.
4. Mash the tomatoes lightly with the back of a spoon.
5. Take the pan off the heat and allow the mixture to cool completely. Transfer this mix into a blender jar and mix to a fine paste.
6. To make the tempering, heat oil in another non-stick pan. Add cumin seeds and let them alter colour. Add asafoetida and cook for a couple of seconds.
7. Add green chillies and red chilli powder and mix well. Cook for a couple of seconds.
8. Include the combined paste and mix well. Stir in the salt and tamarind pulp, mix and cook till oil separates.
9. Change the heat off and move into a serving bowl and garnish with coriander sprig. Serve.
