We all know that saffron and desserts go perfectly together, and today we are bringing you the tasty 'Saffron Rice Pudding', which is really a wonderful treat.

SAFFRON RICE PUDDING.
Ingredients.
A generous pinch of saffron.
3/4 cup short grain rice, soaked for 2-3 hours and drained.
3/4 cup castor sugar.
1/2 tsp green cardamom powder.
2-3 tablespoons butter.
Cinnamon powder for cleaning.
Blanched and slivered pistachios for garnish.
Slivered almonds for garnish.
Approach.
1. Heat a shallow nonstick pan. Include saffron and dry roast on low heat for 30 seconds.
2. Transfer in a mortar and crush with the aid of a pestle. Include 2-3 tbsps warm water and mix well.
3. Heat a nonstick kadai. Add 3 cups water and once it pertains to boil, add rice, saffron water and cook on medium heat for 12-15 minutes or till the rice is totally cooked.
4. Add castor sugar, green cardamom powder and mix well. Cook till sugar melts.
5. Add Butter and blend well.
6. Transfer in specific serving bowls, spray cinnamon powder, garnish with pistachios, almonds and allow to cool down to space temperature.
7. Serve.
