Components for Rajasthani Safed Maas Curry:
( Tsp-Teaspoon; Tbsp-Tablespoon).
– Mutton – 500 gms (curry cut with fat and bones).
For Marination:.
– Ginger garlic paste- 2 tsp.
– Blended curd/yogurt- 5 tablespoon (100 gms).
– White Pepper Powder- 1 tsp.
– Salt- 1.25 tsp.
White Nuts paste:.
– Khuskhus (poppy seeds) -1 tsp.
– Desiccated coconut, grated- 1 tablespoon.
– Soaked and peeled almonds- 12.
– Soaked cashew nuts- 10.
Tempering:.
– Green Cardamom- 3-4.
– Black Cardamom-2.
– Cloves-4.
– Cinnamon- 2 pieces.
– Red Chillies- 5-6.
Other Active ingredients:.
– Onions, sliced- 2 medium (150 gms).
– Ghee- 4 tablespoon.
Preparation:.
– Marinate the mutton with all the ingredients and reserved in the fridge for 2-3 hrs.
For the nuts paste:.
– Soak the almonds and cashews in warm water and peel the almonds after 30 minutes.
– To make the paste, include the poppy seeds, desiccated coconut, peeled almonds and cashews in the grinder after straining the water.
– Coarse grind it till powdery.
– Now include 1/2 cup of the water in which nuts were soaked and mix this into a smooth paste.
Process:.
– Heat ghee in a pan and include all the whole spices and the whole red chillies.
– Give a stir and then add the chopped onions.
– Mix and fry on medium heat for 5-6 minutes till the onions start turning golden.
– Now include the marinaded mutton and scorch on high heat for 5 mins. Continue to scorch on medium heat for another 5 minutes till the mutton is browned and oil separates.
– Now include the nuts paste and blend it well. Fry on medium heat for around 5-6 minutes.
– Continue to cook on low heat for another 5-6 minutes till the paste is prepared well and oil separates.
– Now add 400 ml water, give a mix and cook covered on low heat for around 60 mins till mutton is tender. Open the lid and stir the meat when every 15 mins examining whether water is sufficient. Include water if needed.
– Turn off heat as soon as meat is tender.
