QUINOA DOSA

Components

1 cup quinoa, soaked for 3-4 hours and drained
1/2 cup split skinless black gram (dhuli urad dal), soaked for 3-4 hours and drained
1 tablespoon split pigeon peas (toovar dal), soaked for 3-4 hours and drained pipes
2 tbsps split Bengal gram (chana dal), soaked for 3-4 hours and drained
1/2 tsp fenugreek seeds, soaked for 3-4 hours and drained pipes
Salt to taste
Oil spray for cooking
Tomato chutney for serving
Coconut chutney for serving

Technique

1. Take a grinder container. Add quinoa, 1 1/2 cups water, divided skinless black gram, split pigeon peas, divided Bengal gram, fenugreek seeds and grind to a coarse paste.
2. Include 1/2 cup water and grind to smooth batter. Transfer in a bowl and reserved to ferment for 6-8 hours. Include salt, 1/2 cup water and blend well.
3. Heat a nonstick tawa. Dip a piece of muslin fabric in water and wipe the tawa. Spread a ladleful of batter uniformly. Spray some oil and cook for 3-4 minutes on medium heat.
4. Flip and cook for a minute more.
5. Serve hot with tomato chutney and coconut chutney.
