Components for Pepper Shrimp in Coconut Milk

( Tsp-Teaspoon; Tbsp-Tablespoon).

Shrimp/Prawns – 750 gms (gross) – nett 400-450 gms after shelling & deveining.

For marination:.
– Pepper powder- 1/2 tsp.
– Salt-3/ 4 tsp.
– Turmeric powder-1/ 2 tsp.

Tempering:.
– Green chillies, great sliced- 2 little.
– Dry red chillies, fine chopped- 2 nos.
– Curry leaves -15 nos.

Spice powders:.
– Red Chilli powder – 1/2 tsp.
– Fennel powder (saunf) – 1/2 tsp.

Other Components:.
– Onions, fine sliced- 2 medium (150 gms ).
– Ginger garlic paste- 1.5 tsp.
– Tomatoes, sliced- 1 medium (75 gms).
– Coconut milk- 250 ml.
– Salt- pinch in tomatoes.
– Lemon juice- 1 tsp.
– Coriander sliced- 2 tbsp.
– Oil- 4 tbsp.

Preparation:.

– Clean and devein the prawns.
– Marinade the prawns with salt, crushed pepper and turmeric powder. Reserve for around 20 mins.
– Chop the onions, green chillies, dried red chillies, tomatoes and coriander leaves.
– Prepare coconut milk or additionally use shop bought all set coconut milk.

Process:.

– Heat oil in a pan and include chopped onions.
– Fry on medium heat for 5 minutes till yellow in color.
– Include the chopped green chillies & red chillies, curry leaves, mix & fry for a minute.
– Now include the ginger garlic paste, mix & fry for around 2 minutes on low heat till the raw smell is gone.
– Now include the fine chopped tomatoes, pinch of salt and red chilli powder and cook on low heat for around 3-4 mins till the tomatoes are pulpy.
– Next add the marinated prawns, blend well & fry on medium heat for around 2 minutes.
– Now include 1/2 tsp saunf powder, give a mix, cook for around a minute and then include the coconut milk.
– Mix well & cover and cook on low flame for around 5 minutes.
– Last but not least season with a pinch of salt if required, add lemon juice & sliced coriander leaves.
– Mix well and simmer for a minute or more.

  3. Prawns should be cooked only 5 minutes but the total time you have taken is 9 minutes.. The prAwns will become hard.. My humble opinion

    1. With due respect, the chemical composition of onions + ging-garlic paste + tomatoes actually slows down the tenderising of the prawn .. The sourness actually.. We can notice this even with vegetables added at this stage .. So instead of prawns getting cooked in 4-5 mns [you toss plain prawns over the pan, tada! It’s done in 4-5 MNS as you have observed] , it takes a little extra time .. taking into account the size of the prawns as well .. Hope I’ve thrown some light on this ..
