A spicy, sharp tasting gravy with paneer preparation. The marinaded paneer when cooked in mustard oil includes a distinct taste to the dish. Make sure you have butter naans or rotis to begin.
PANEER BHUNA MASALA
Active ingredients
400 grams cottage cheese (paneer), cut into 1 inch cubes
1/2 cup grated home cheese (paneer).
1/2 cup yogurt.
Salt to taste.
2 tbsps roasted gram flour (besan).
1 tsp cumin powder.
3/4 tsp coriander powder.
1/2 tsp black pepper powder.
1/2 tsp garam masala powder.
1 tsp red chilli powder.
1/4 tsp turmeric powder.
1 tablespoon ginger-garlic paste.
2-3 tbsps mustard oil.
Gravy.
2-3 tbsps mustard oil.
1 tsp cumin seeds.
2 star anise.
1 inch cinnamon stick.
3-4 green cardamoms.
4-5 cloves.
6-8 black peppercorns.
2 big onions, carefully sliced.
1 tbsp ginger-garlic paste.
2 large tomatoes, finely chopped.
Salt to taste.
1 tsp red chilli powder.
1/2 tsp garam masala powder.
1/4 tsp turmeric powder.
1 1/2 tsps coriander powder.
2-3 green chillies, slit.
1 tbsp chopped fresh coriander leaves.
Method.
1. Integrate together yogurt, salt, roasted gram flour, cumin powder, coriander powder, black pepper powder, garam masala powder, red chilli powder, turmeric powder, and ginger-garlic paste in a big bowl. Include paneer cubes and gently mix till each cube is well covered with the masala. Set aside to marinade for 15-20 minutes.
2. Heat mustard oil in a pan.
3. Add the paneer cubes and prepare on both sides for 2-3 minutes. Take the pan off the heat.
4. To make the gravy, heat mustard oil in a wide pan. Include cumin seeds, star anise, cinnamon stick, green cardamoms, cloves, black peppercorns, and sauté till fragrant.
5. Include onions, mix and cook till golden brown. Add ginger-garlic paste and mix well. Prepare for 1-2 minutes.
6. Add tomatoes, mix, add salt, and mix once again. Cook till soft and pulpy.
7. Include red chilli powder, garam masala powder, turmeric powder, and coriander powder and sauté for 1-2 minutes.
8. Include 1 cup water, mix and cook for 2-3 minutes. Include grated paneer and mix well. Prepare for 1-2 minutes.
9. Include the paneer cubes and carefully mix till well combined. Include green chillies, and coriander leaves and blend well. Prepare for 1-2 minutes.
10. Serve hot.

I love this recipe, but I’m always afraid someone will bite into a whole peppercorn and hurt their teeth, so I grind my pepper before adding it. I don’t think it makes that much of a difference in taste, does it?
