ONE POT MACARONI

Ingredients

1 1/2 cups macaroni
1 1/2 cups tomato concasse
3 cups veggie stock
1/2 medium zucchini, approximately sliced
5-6 button mushrooms, quartered
1/2 cup corn kernels
1 small carrot, peeled and cut into triangles
6-8 broccoli florets
Salt to taste
1 tsp sugar
1/2 tsp red chilli flakes
1/2 tsp dried mixed herbs
1/4 cup grated parmesan cheese
1 tbsp extra virgin olive oil
Fresh basil sprig for garnish

Approach

1. Heat a nonstick pan. Include tomato concasse, vegetable stock, zucchini, button mushrooms, corn, carrot, broccoli florets, salt, sugar, red chilli flakes, dried blended herbs, parmesan cheese, macaroni and olive oil. Cover and prepare on medium heat for 10-15 minutes.
2. Transfer in a serving bowl, garnish with basil sprig and serve hot.
