MALAI PYAAZ KI SABZI.

Ingredients.

300 grams fresh malai.
6 small onions (pyaz).
2 tbsps oil.
1 tsp cumin seeds.
1/2 tsp asafoetida (hing).
1 tsp onion seeds (kalaunji).
1 tablespoon chopped garlic.
1/2 tbsp chopped ginger.
2 green chillies, sliced.
Salt to taste.
1 tsp red chilli powder.
1 tbsp coriander powder.
1 tsp cumin powder.
1/2 tsp turmeric powder.
1/2 tsp garam masala powder.
1/4 tsp dried fenugreek leaves (kasuri methi) powder.
2-3 tbsps chopped fresh coriander leaves.
Fresh coriander sprig for garnish.
Paranthe to serve.

Method.

1. Heavily piece onions and separate the layers.
2. Heat oil in a non-stick pan. Add cumin seeds and when they start to alter the colour, include onion seeds, asafoetida and sauté for a couple of seconds. add garlic, ginger, and green chillies and sauté for 1 minute.
3. Include onions, salt and blend well. Cook for 4-5 minutes on medium heat.
4. Add red chilli powder, coriander powder, cumin powder and turmeric powder and blend well. Prepare for 1 minute.
5. Add fresh malai and blend well. Prepare for 1-2 minutes.
6. Include garam masala powder, dried fenugreek leaves powder, and coriander leaves and mix well.
7. Take the pan off the heat and move the mixture into a serving bowl. Garnish with coriander sprig and serve hot with paranthe.
