A crispy salad with smoked and raw veggies … Easy lapsi with a wonderful pop of red/yellow bell peppers, the freshness of mint and a drizzle of a citrusy dressing.
LAPSI AUR SHIMLA MIRCH SALAD
Components
1 1/2 cups-soaked damaged wheat (lapsi).
1 big red capsicum (lal shimla mirch).
1 big yellow capsicum (pili shimla mirch).
1 medium onion, sliced.
2 medium tomatoes, seeded and diced.
1 tablespoon sliced fresh coriander leaves.
Salt to taste.
White pepper powder to taste.
A pinch of sugar.
1 tablespoon lemon juice.
4 tbsps carefully chopped fresh mint leaves.
A couple of leaves of iceberg lettuce.
Technique.
1. Roast each capsicum over direct flame till well charred from all sides. Set aside to cool.
2. Add the drenched broken wheat, onion, tomatoes, coriander leaves, salt, white pepper, and sugar, lemon juice, mint leaves and mix till well combined.
3. Peel the charred capsicums and cut into little pieces and contribute to the bowl.
4. Tear the iceberg lettuce leaves and add into the salad bowl and toss well. Serve.
