*”Air-fryer Snack Recipes”*
*_1. Crunchy Vegetable Nuggets_*
*Ingredients:-*
* Potatoes: 2-3 large (boiled and mashed)
* Soy Mince: ½ cup (soaked)
* Green Peas: ¼ cup (boiled and lightly crushed)
* Broccoli: ½ cup (grated)
* Garam Masala: 1 tsp
* Chaat Masala: 1 tsp
* Salt: To taste
* Bread Crumbs: ½ cup (for binding)
* Green Chillies: 2 (finally chopped)
* Mayonnaise: 1-2 tbsp (for internal softness)
* Oil: For spraying
*Instructions:-*
* In a large mixing bowl, combine the mashed potatoes, soaked soy mince, crushed peas, and grated broccoli.
* Add garam masala, chaat masala, salt, chopped green chillies, and mayonnaise.
* Add bread crumbs and knead the mixture well until it holds its shape.
* Preheat your air fryer. Shape the mixture into small oval or flat nuggets.
* Arrange the nuggets in a single layer in the air fryer basket (do not overlap).
* Lightly spray with oil and air fry until golden and crisp. Flip them once halfway through for even cooking.
* Serve hot with your favorite dip.
*_2. Bajra Masala Mathri_*
*Ingredients:-*
* Bajra Flour (Pearl Millet): 1 cup
* Wheat Flour: ¼ cup
* Ghee: 2 tbsp
* White Sesame Seeds: 1 tbsp
* Red Chilli Powder: 1 tsp
* Turmeric Powder: ¼ tsp
* Coriander Seeds: 1 tsp (crushed)
* Ajwain (Carom Seeds): ½ tsp
* Fresh Coriander: 2 tbsp (chopped)
* Salt: To taste
* Water: As needed for a stiff dough
*Instructions:-*
* In a bowl, mix bajra flour, wheat flour, and ghee.
* Add sesame seeds, red chilli powder, turmeric, crushed coriander seeds, ajwain, fresh coriander, and salt.
* Gradually add water and knead into a stiff dough. A soft dough will result in less crispy mathris.
* Take small portions of the dough and flatten them into small discs (mathris) using your hands or a rolling pin.
* Crucial Step: Prick each mathri with a fork to prevent them from puffing up.
* Preheat the air fryer and place the mathris in a single layer.
* Air fry until they are golden brown and crunchy. Serve with tea.
*_3. Crispy Veggie Spring Rolls_*
*Ingredients:-*
* Cabbage: 1 cup (finely sliced)
* Carrots: ½ cup (finely sliced)
* Capsicum: ½ cup (finely sliced)
* Garlic: 1 tbsp (chopped)
* Red Chilli Sauce: 1 tbsp
* Vinegar: 1 tsp
* Spring Onions: ¼ cup (chopped)
* Spring Roll Wrappers: 6-8 sheets
* Slurry: 2 tbsp All-purpose flour (Maida) mixed with water
* Oil: 1 tbsp (for sautéing) + more for spraying
*Instructions:-*
* Heat oil in a pan and sauté garlic until fragrant.
* Add cabbage, carrots, and capsicum. Toss on high flame for only 1-2 minutes to keep them crunchy.
* Stir in salt, red chilli sauce, vinegar, and spring onions. Remove from heat and let it cool.
* Place 1-2 tablespoons of stuffing on a spring roll wrapper.
* Apply the maida slurry to the edges. Fold the bottom, then the sides, and roll tightly to seal.
* Preheat the air fryer and lightly grease the basket.
* Place rolls in a single layer, spray with oil, and air fry until golden brown and crispy.
*_4. Moong Dal Pakoda_*
*Ingredients:-*
* Moong Dal: 1 cup (soaked for 2-3 hours)
* Ginger & Garlic: 1-inch piece and 3-4 cloves
* Green Chilli: 1 large
* Onion: 1 small (chopped)
* Cabbage & Spinach: ½ cup (chopped)
* Ajwain & Hing: ½ tsp and a pinch
* Turmeric & Sesame Seeds: A pinch and 1 tsp
* Chaat Masala & Salt: To taste
* Baking Soda: A pinch
* Oil: 1 tsp (for the batter) + more for brushing
*Instructions:-*
* Grind the soaked moong dal with ginger, garlic, and green chilli into a rough paste. Do not add water.
* Transfer to a bowl and add chopped onion, cabbage, spinach, ajwain, hing, turmeric, sesame seeds, salt, chaat masala, and baking soda.
* Drizzle 1 tsp of oil into the batter and fold gently.
* Preheat the air fryer. Line the basket with parchment paper and brush with oil.
* Drop small portions of the batter into the basket, leaving space between them.
* Air fry until golden. Halfway through, brush with a little more oil to enhance the crispiness.
* Serve hot with chutney.
