GREEN GARLIC

Active ingredients

1/2 lot of green garlic, carefully chopped with the stalks
3 cups cooked Basmati rice
3 tablespoons oil
1 1/2 tsps cumin seeds
3-4 cloves
2 bay leaves
2 spring onion bulbs, carefully chopped
1/2 tablespoon ginger-green chilli paste
1 little green capsicum, finely chopped
1/2 cup green peas
Salt to taste
1/4 tsp turmeric powder
2 tsps pav bhaji masala
1/2 cup blanched spinach puree
1/4 tsp dried fenugreek leaves powder
1/2 tbsp lemon juice
1/2 tsp garam masala powder
2 tbsps chopped fresh coriander leaves
2 tablespoons butter
2 tbsps sliced spring onion greens
Slit fresh red chilli for garnish
Fresh coriander sprig for garnish

Approach

1. Heat oil in a non-stick shallow tawa. Add cumin seeds, cloves and bay leaves and sauté till aromatic.
2. Add spring onion bulbs and mix well. Cook for 1-2 minutes.
3. Include green garlic and sauté for 1-2 minutes. Add ginger-green chilli paste and sauté for 1-2 minutes.
4. Include green capsicum, green peas and blend well. Cook for 2-3 minutes. Add salt, turmeric powder and pav bhaji masala and blend well. Include 1/4 cup water and sauté for 1-2 minutes.
5. Include blanched spinach puree and mix. Prepare for 1 minute.
6. Add the rice and toss till well combined. Include dried fenugreek leaves powder, lemon juice, garam masala powder and coriander leaves and mix well.
7. Include butter and mix till well combined. Include spring onion green and mix. Transfer on a serving plate. Serve hot garnished with slit red chillies and coriander sprig.
