Pignoli Cookies

Level: Easy
Total: 35 minutes (includes cooling time).
Active: 10 min.
Yield: 12 cookies.
Active ingredients.
One 7-ounce tube almond paste.
1/2 cup confectioners' sugar.
1/2 teaspoon pure vanilla extract.
1/4 teaspoon kosher salt.
1 large egg white.
2/3 cup pine nuts.
Instructions.
Pre-heat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper and set aside.
Break apart the almond paste in the bowl of a food mill. Add the confectioners' sugar, vanilla extract, salt and egg white and pulse until smooth. Scoop 1-tablespoon balls of dough directly into the pine nuts and gently roll them in the pine nuts, pressing gently to adhere. (The dough is soft but the pine nuts will assist make it easier to deal with.).
Place the cookies 2 inches apart on the prepared flat pan. Bake until gently browned around the edges and puffed, 16 to 18 minutes. Enable to cool entirely on the tray prior to eliminating them with a balanced out spatula.

Vanilla extract is a positive thing that’s actually cheaper than it was a few years ago.
Well, that’s just vanilla extract that went down. How about the expensive ingredient…the pine nuts at $30.00 per pound. I don’t value those nuts that much. Is there a similar nut texturewise that could be a similar substitute?
They look good. I want to make them. But can’t use almond paste my daughter is allergic to almonds. I will still make them make her’s with something else.
