Components for Eid Unique Mutton Pulao:
( Tsp-Teaspoon; Tbsp-Tablespoon).
– Mutton, big pieces with bones- 1 Kg.
– Basmati Rice-750 gms (4 US cups).
– Water – 6 United States cups (1.4 Liter).
Tempering:.
– Shah jeera- 1.5 tsp.
– Green cardamom -6.
– Cinnamon-3 pieces.
– Cloves-8.
– Black peppercorns-10.
– Bay leaf-2 nos cut into 2 pcs.
Spice Powders:.
– Coriander powder-4 tsp.
– Cumin powder- 2 tsp.
– Garam Masala powder -1 tsp + 1 tsp while cooking rice.
– Salt- 2 1/2 tsp.
Other Ingredients:.
– Onion, sliced – 3 medium onions (around 225-250 gms).
– Ginger garlic paste- 2 tablespoon.
– Tomato sliced- 2 small Or one huge -around 120 gms.
– Green chillies -4+ 2 Green chillies cut.
– Coriander leaves, chopped-5-6 tbsp.
– Juice of half lemon -2 tsp.
– Salt in water-2.25 tsp.
– Oil-100 ml (7 tablespoon).
– Ghee-2 tbsp.
Preparation:.
– Wash and cut the mutton into big pieces. Set aside.
– Slice the onions and tomatoes, slit the green chillies.
– Likewise chop the coriander leaves and reserved for usage later.
– Soak the basmati rice 30 minutes prior to adding to prepared mutton.
Process:.
– Heat oil and ghee in a pressure cooker and add the whole spices. Offer a stir,.
– Add the sliced up onions. Fry on medium heat for around 10-12 mins till golden/ brown.
– Now include the ginger garlic paste and a splash of water.
– Mix and fry on low heat for around 2 mins till raw odor is gone.
– Now include the mutton, all the spice powders and salt. Mix and prepare on medium heat for around 3 mins.
– Add the chopped tomatoes. Mix and continue to sear/bhuno on medium heat for another 5 mins till browned and oil separates.
– Now include the water, 4-5 green chillies cut and 3-4 tablespoon chopped coriander leaves.
– Mix it well and pressure cook for around 8-9 mins (2 whistles-on high heat till 1 whistle and then on low heat for the balance time).
– Enable the pressure to launch on its own and then remove the lid.
– Offer a mix again and turn on heat. Include the drenched rice, some more green chillies and coriander leaves, salt, lemon juice and 1 tsp garam masala powder. Close lid and pressure cook for one whistle-around 8 mins on high heat.
– Switch off heat and permit it to rest for 10-15 mins.
– Release pressure so that rice doesn't end up being too soft.
– Open lid and serve hot.

I love all the recipes. But here’s my question: I have no pressure cooker. What would be the cooking time (2 whistles) for the lamb in a normal pot on the stove?
Thanks! The lamb may take a total of 45-60 mins to cook without pressure cooker or instant pot. So for the first part of the process (cooking the lamb) cook covered on low heat for around 30-45 minutes. Shouldn’t be fully tender since it will cook along with the rice too.
For the 2nd part of the process (cooking the rice and meat together) you can cook covered on low heat for around 15 mins. Midway open the lid give a gentle mix and then again cook on low heat till the rice is tender.
Don’t open lid immediately. Allow it to rest for around 20-30 mins and then serve.
