Ingredients for Dhaba Design Egg Masala Curry:
– Boiled Eggs- 6
Tempering:
– Cumin Seeds- 3/4 tsp
– Red Chillies- 3
– Green Chillies, slit- 3
Spice Powders:
– Turmeric Powder- 1/2 tsp
– Red Chilli Powder – 1.5 tsp
– Coriander Powder- 1.5 tsp
– Garam Masala Powder- 1/2 tsp
Other Active ingredients:
– Onions grated/paste – 2 medium (120 gms).
– Ginger Garlic paste- 1.5 tsp.
– Readymade Tomato Puree (or tomato paste)- 5 tablespoon.
– Besan -2 tsp mixed in 2-3 tbsp water.
– Coriander leaves and stems, rough chopped- 4 tbsp.
– Fresh cream -3 tablespoon.
– Kasuri Methi (Dry Fenugreek Leaves)- 1 tsp.
– Coriander leaves fine chopped for garnish -1 -2 tablespoon.
– Oil-3-4 tablespoon.
– Salt- 1/2 tsp.
Preparation.
– Boil the eggs and shell.
– Grate the onions. Slit the green chillies, rough chop the coriander leaves and stems.
– Also great chop around 1-2 tbsp to be used as garnish.
– Dry roast the Kasuri Methi (Dry Fenugreek leaves) and then squash it as soon as cooled.
Process.
– Heat oil in a kadai or wok and include a pinch of turmeric powder. Provide a stir and then include the shelled eggs.
– Stir and fry the eggs for 2-3 mins on low heat till light yellowish and light brown. Remove and reserve.
– In the same hot oil in which the eggs were fried add the cumin seeds, slit green chillies and the dried red chillies.
– Give a stir and then include the grated onion and fry on medium heat for around 4 minutes.
– Now include the ginger garlic paste, blend and continue to fry on medium to low heat for another 4-5 mins.
– Now include the rough sliced coriander leaves and stems, mix and fry for a minute.
– Now add the readymade tomato paste/puree, mix and cook on low heat for around 2-3 mins till oil separates.
– Include all the spice powders other than garam masala powder mix and salt. Add a splash of water, mix and fry on low heat for around 2-3 minutes.
– Now add the besan in water, mix and cook on low heat for around 2-3 mins till prepared.
– Now add 350 ml water, mix, and include the fried eggs after giving cuts on the sides.
– Offer a stir & cover and prepare on low heat for 5 mins till oil separates.
– Eliminate lid and include the garam masala powder, fresh cream & roasted and crushed Kasuri Methi. Provide a stir and simmer on low heat for 2 mins.
– Garnish with 1-2 tablespoon sliced coriander leaves & serve with rice or roti.

Tried it ! Super easy to make and very tasty
Should have told to cut Chilli and put it in the curry for frying…it nearly flew from the kadhai…..didn’t like it…
