CHINCHECHA SHARBAT
Active ingredients
3/4 cup tamarind
3/4 cup chopped jaggery
1/4 tsp black salt
1/4 tsp roasted cumin powder
Ice cubes as needed
Technique
1. Soak the tamarind in 1 1/2 cups water in a bowl for 25-30 minutes.
2. Strain the tamarind through a fine strainer, and capture to draw out the pulp in another bowl. Include jaggery and mix till it melts.
3. Add black salt, and roasted cumin powder and blend well. This is the tamarind syrup.
4. Add 2 tablespoons of the tamarind syrup in a serving glass. Include ice and top up with cooled water. Mix and serve instantly.
