BLACK RICE PUDDING.

Active ingredients.

4 cups milk.
2 tablespoons black rice, washed, soaked overnight and drained.
3/4 cup sugar.
2 tbsps fried raisins.
8-10 pistachios, blanched, peeled and slivered.
1/2 tsp green cardamom powder.

Technique.

1. Heat milk in a non-stick deep pan, let it come to a boil. Include the drenched rice, mix and cook for 30-35 minutes or till the rice is prepared totally. Stirring continually.
2. Add sugar, mix and cook till it melts.
3. Include fried raisins, pistachios and green cardamom powder and blend well. Cook for 1 minute.
4. Serve warm or cold.
